Chicken Cutlets with Herb Sauce

I made this the other night from a cookbook I LOVE. It's called "Meals Made Easy"
This dish turned out amazing. This was actually about a month ago now. Don't forget,
I'm not drinking in 2011 anymore...


1 tbs olive oil
1 1/2 lb potatoes, cut
2 tsp kosher salt
1 lb chicken cutlets
pepper
1/4 cup dry white wine
2 tbs butter
2 tbs fresh chopped herbs, ie. rosemary, chives, parsley, etc.

heat oven to 425˚
heat oil in skillet ( medium high heat )
add potatoes, cook 15 min stirring occ
transfer to a baking dish and season w/ salt
bake for 10 min
meanwhile, rinse chicken and pat dry
season both sides with salt & pepper
return skillet to medium-high heat
add chicken and cook 3-4 min/ side
transfer chicken to platter

sauce:
add wine to skillet, reduce heat
simmer for 2 min, constantly stirring
scraping bottom
add 1 tbs of butter and stir or whisk
repeat with remaining butter
remove from heat
add herbs, salt, & pepper

combine platter ingredients and spoon sauce over it all
