Potato Leek Pasta

Originally known as "Richie's Amazing Potato Leek Pasta". I realized that there were way to many recipes in our book starting out with "Richie's Amazing..." so I shortened the title.

2 large potatoes
olive oil
1/2 stick butter
2 cloves of garlic
1 small onion
2 leeks
2 packages of cheese raviolini
kosher salt
peppercorn medley
freshly grated parmesan cheese

boil potatoes only to soften - 5 min
peel and cut into small 1/2" cubes (set aside to cool)
cut leeks and onions
saute in butter until translucent
add garlic
add olive oil off and on
add potatoes & raviolini (slightly boiled - 2 min)
fry and brown all ingredients
salt & pepper
add freshly grated parmesan when served
